Vegan Chai Quinoa Pancakes Recipe

At our home I can’t get enough of pancakes! There are many ways you can make pancakes, usually with wheat flour, sugar and eggs. But here at the Vegan Kitchn, we’re on an endeavour to make pancakes that are not only vegan, but also gluten free and sugar free!

These Chai Quinoa Pancakes are packed full of protein and sweetened with natural stevia. These pancakes are perfect if you’re on a Candida Diet (minus the Maple Syrup)! While making the standard pancake one day, I thought why not try something new!? I decided to add in some Chai spices into the mixture.

I decided to add in some cinnamon, Cardamom, Cloves, Ginger, Nutmeg and some Garam Masala for something more special! Combined with the fluffy quinoa texture was the delightful Chai spices which really add something new to the good old fashioned pancake! Top these pancakes with some Maple Syrup and your favourite fruit!

Learn how to make these yummy fluffy Quinoa Pancakes spiced up with Chai spices. Perfect for a healthy Weekend breakfast.

Ingredients

  • 1 Tbsp Ground Flaxseed
  • 3 Tbsp Water
  • 1 Cup Quinoa
  • 2 tbsp Stevia
  • 1/2 tsp Baking Powder
  • 1 1/4 Non-Dairy Milk
  • 1/2 tsp Cinnamon
  • 1/4 tsp Cardamom
  • 1/8 tsp Cloves
  • 1/4 tsp Ginger Powder
  • 1/4 tsp Garam Masala
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla Extract

Instructions

  1. In a small bowl prepare your Flax Egg by mixing the Flaxseed and Water and set aside. In a separate bowl place the Flour, Sugar, Baking Powder, Salt and Spices.
  2. Stir the dry ingredients together. Next add in the Almond Milk and Flax egg and stir until it makes a nice batter mixture. Heat up your frying pan on a low to medium heat. You can cook the pancakes in Coconut oil.
  3. Once you see bubbles forming on the surface of the pancakes it’s time to flip!
  4. Optional: For a low fat option you can place a sheet of baking paper onto the pan and cook your pancakes on top of the paper.
  5. Serve the pancakes with Maple Syrup and your favourite fruit!
