Spicy Vegan Fried Rice

Fried rice in a quick and easy meal to prepare on a weeknight. Our vegan fried rice is packed with vegetables, fresh spices like saffron and delicious brown rice. This meal takes only 30 minutes to prepare and is very tasty!

Vegan Fried Rice

Here at the Vegan Kitchn we're all about health. Our vegan fried rice is lighter and much healthier for you. Our recipe contains no oil but you would never know it with the taste! Containing less fat, all you need are a few simple ingredients to create this yummy meal.

All you need are veggies, tamari and of course white or brown rice. We've added in some fancy saffron to brighten up the dish, but you can always replace it with turmeric instead for a cheaper option.

Vegan Fried Rice Recipe

We'll be using a wok or a skillet for bring all the ingredients together. You can cook the rice the day before or you can prepare the rice a head of time. We prefer long grain rice with this recipe, short grain tends to clump together.

This meal is perfect if you have leftover vegetables you need to use up! You can optionally add in more vegetables like baby spinach or even some protein like beans or tofu.

Tasty and delicious vegan fried rice that's low in fat. Packed with your favourite veggies, this makes for a quick and easy vegan meal!


  • 1 cup white or brown rice
  • 1/2 cup Red Bell Pepper
  • 1/2 cup corn kernels
  • 1/2 cup peas
  • 1/4 teaspoon saffron threads (optionally you can replace with turmeric)
  • 1 or 2 tablespoons extra virgin olive oil
  • 2 cloves of garlic
  • 1 onion
  • 1 carrot (diced)
  • 1 tbsp curry powder (optional)
  • 2 tablespoons soy sauce or tamari
  • Coriander for garnish
  1. Cook the rice according to package directions. To give the rice a nice bright color, add in saffron threads or turmeric in the water before cooking. 
  2. Heat up a wok or skillet with some oil or for a healthier version you can replace the oil with some water instead. Add chopped curry powder, garlic, onion, diced carrots and diced red bell pepper. Cook them over medium-high heat for about 2 minutes. Add peas and corn kernels and cook for 2 minutes.
  3. Add the rice, soy sauce or tamari and cook for 2 or 3 minutes or until rice is hot.
  4. Optionally you can add in some beans or tofu to boost up the protein!
